Which rate is this?

These are the daily exchange rates (Nationalbanken reference rates) of the Danmarks Nationalbank, against the DKK. Each value is shown both as the price of one unit of the currency in DKK and as the amount of the currency one DKK buys.

What happens on weekends and holidays?

The bank publishes nothing on those days. Rules that refer to a day without a publication usually mean the last rate published before it, which is what the API returns for such a date.
